HERB BUTTER
Let food be your medicine, and medicine be your food
Hippocrates
INGREDIENTS
4 sticks of butter
1 cup fresh herbs chopped
2 tsp sea salt (or to taste)
1 tsp fresh ground black pepper
1 tsp garlic
Bring the butter to room temperature. Chop whatever herbs you have available into fine pieces. You almost can’t go wrong with the combination. It is always safe to use herbs that you like and use regularly. Once you have confidence, you can go wild with all sorts of flavors. Stir in remaining ingredients. Place the softened herb butter onto a large piece of syran wrap. Roll the wrap and create a log of butter. Wrap the ends. Place into the refrigerator of a few hours. Remove and slice.
Use what you like fresh and then freeze the rest in a plastic container with pieces of wax paper between the layers. Pull out one or ten pieces as needed for garlic toast, fish, baked potatoes etc. But I warn you, there are so many uses for this flavorful butter, that you will make it again and again. ENJOY!
